Puran Poli is a traditional Indian sweet that is especially popular during festivals and special occasions. It is made with a sweet filling of lentils and jaggery, all wrapped in a soft, doughy exterior. When prepared with A2 desi cow ghee, this dish not only gains a rich flavour but also enhances its nutritional value. Here’s a simple recipe to make Puran Poli using A2 ghee.
Ingredients:
- For the dough:
- 2 cups whole wheat flour
- 2 tablespoons ghee
- Water (as needed)
- A pinch of salt
- For the filling:
- 1 cup split chana dal
- 1 cup jaggery, grated
- 1/2 teaspoon cardamom powder
- 1 tablespoon ghee
Instructions:
1. Prepare the Dough:
- In a bowl, mix the whole wheat flour and a pinch of salt. Add the A2 ghee and rub it into the flour until it looks like breadcrumbs.
- Gradually add water to form a soft dough. Cover it and let it rest for about 30 minutes.
2. Cook the Filling:
- Rinse and cook the chana dal in water until soft. This should take about 12 minutes. Then drain the water and mash it.
- In a pan, heat 1 tablespoon of A2 ghee. Add the mashed dal and jaggery, cooking until the mixture thickens. Then stir in the cardamom powder and let it cool.
3. Roll and Cook:
- Divide the dough and filling into equal portions. Roll out each dough ball into a small disc, place the filling in the centre, and fold the edges to seal.
- Roll it gently to a flat circle. Cook it on a hot tava, by adding A2 ghee on both sides until golden brown.
Puran Poli made with A2 ghee is a delicious and nutritious treat perfect for any occasion. Enjoy making and sharing this traditional sweet with loved ones!
